Delicate bud and one leaf sets are carefully processed to give a light yellow liquor and pleasing mild flavor. The leaf separates from the bud when brewed forming a forked sparrow's Tongue. From Huangshan, China.

Brewing: 1.5 tsp, 170 degrees, 2 minutes, 3 infusions

Brewing vessel: gaiwan, glass mug
